Ingredient

  • 1 tablespoon olive oil
  • 1 zucchini, chopped
  • 2 carrots, chopped
  • ½ onion, chopped
  • ½ tbs minced garlic
  • 2 heads broccoli, chopped
  • 1/2 cup raw cashews
  • 3 cups vegetable broth
  • 2 cups of Green Thumb Foods Oatmilk
  • 1 cup nutritional yeast
  • 2 tablespoons lemon juice
  • Salt, pepper, basil, & onion powder

 

Instructions

 

  1. Saute onions, garlic and cashews in olive oil until fragrant. Add zucchini, carrots and preferred seasonings and cook for another 3-5 minutes.
  2. Pour in veggie broth and oat milk.
  3. Add broccoli and bring to a bowl, then reduce heat to a simmer.
  4. Cook for 20 minutes and transfer soup to a blender. Blend until smooth, taste, and add more seasonings. Add oat cream to make it creamier and enjoy!
