Ingredient
- 1 tablespoon olive oil
- 1 zucchini, chopped
- 2 carrots, chopped
- ½ onion, chopped
- ½ tbs minced garlic
- 2 heads broccoli, chopped
- 1/2 cup raw cashews
- 3 cups vegetable broth
- 2 cups of Green Thumb Foods Oatmilk
- 1 cup nutritional yeast
- 2 tablespoons lemon juice
- Salt, pepper, basil, & onion powder
Instructions
- Saute onions, garlic and cashews in olive oil until fragrant. Add zucchini, carrots and preferred seasonings and cook for another 3-5 minutes.
- Pour in veggie broth and oat milk.
- Add broccoli and bring to a bowl, then reduce heat to a simmer.
- Cook for 20 minutes and transfer soup to a blender. Blend until smooth, taste, and add more seasonings. Add oat cream to make it creamier and enjoy!
