Banana Batter Ingredients
- 1 1/3 cups spelt flour
- 1tblsp cornstarch
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1tsp baking powder
- 2-3 ripe bananas
- 1/3 cup water
- 1 scoop Green Thumb Foods Oat Milk Powder
- 1/3 cup vegetable oil
- 1/2 cup granular monk fruit sugar
- 4 servings Sweet Leaf Stevia caramel macchiato
- 2 tsp vanilla extract
- 1 tsp apple cider vinegar
Caramel Sauce Ingredients
- 1/2 cup oat milk (already made and blended using our powder)
- 6 tbs brown sugar
- 1/2 tbs cornstarch
Directions
1. Preheat oven to 350 degrees and grease banana loaf pan.
2. Whisk together flour, cornstarch, cocoa powder, baking soda, and baking powder into a bowl and set aside.
3. In a blender add water, oat milk powder, oil, vanilla extract, and apple cider vinegar.
4. In a separate bowl, peel and mash bananas until smooth (or leave chunkier if you like bites of banana in yours). Add wet ingredients from blender into banana mixture and add caramel macchiato monk fruit sweetener and granular monk fruit sugar. Stir until just combined.
5. Mix flour mixture with banana mixture until batter forms (do not over mix)
6. Pour batter into pan and top with chocolate chips. Bake 40-50 mins if you have a traditional 9 inch loaf pan or 20–25mins if you have a mini loaf pan (as pictured). Poke a toothpick one timer is done to double check it comes out clean with no batter on it.
7. Cool 10 minutes then transfer to cooling rack. Enjoy after completely cool!
To make the caramel sauce, add everything into a small pan and heat over medium-high until the mixture gets bubbly. Lower the heat to a simmer and stir frequently for 10 minutes. Remove from heat and put in the fridge for 20 minutes to thicken.
